Pumpkin Soup!
I love fall, and I love soup. Soups are great easy ways to get in more veggies for you and your kiddos! As soon as we can buy pumpkins to cook with we do!
RECIPE: Ingredients: 1 baking size pumpkin, half a chopped onion, 4-5 large carrots peeled and cut, 1 tablespoon butter, 1 can coconut cream (8 ounces), 16 ounces or more of organic chicken broth, 1/2 teaspoon nutmeg or more to taste
Cook: Cut pumpkin in half and scrape out inside. Put face down on a plate one half and microwave 10 minutes, then repeat with other half. Then scrape that out.
While you are doing that, the cook onion and carrot together with butter in a tall pot. after 5-10 minutes add chicken broth and let simmer about 20 minutes, then add the cooked pumpkin and let simmer 5 minutes. Using a blender or immersion blender, blend it all up, then add the coconut cream and nutmeg and blend until smooth!
